Main risks

The main risk could be having limited visibility on the project. If you don't have time to interview all the different stockholders, that means that you don’t have all the requirements (and constraints) and you may make too many assumptions based on uncertain information.

A bad timeline during project implementation could be another risk; maybe you spend too much time during the PoC, or define a design so complex that the time to implement the entire solution does not match the required time to market.
